Brownies with Cookie Dough Frosting– The Healthy Way!

Quinoa Brownies with Cookie Dough Frosting

Makes 16 Brownies

Ingredients:

  • 1 Cup Cooked Quinoa
  • 2 Packets Truvia (or Stevia of Choice)
  • 1/4 Cup Cocoa
  • 1/4 Cup Unsweetened Almond Milk
  • 3 Tbsp Plain Pumpkin Puree
  • 2 Eggs (or 1/4 Cup Ground Flax, 2 Tbsp Water and 2 Tbsp Nut Butter)
  • 1 Tbsp Vanilla
  • 2 Tbsp Agave (or Honey/Stevia)
  • 1/8 Tsp Baking Soda
  • 1/4 Cup Dark Chocolate Chips

Directions:

  1. Place all ingredients (excluding the dark chocolate chips) into the food processor and blend until smooth.
  2. Pre-heat your oven to 375 F.
  3. Stir chocolate chips into pureed batter.
  4. Grease your 8×8 baking dish.
  5. Spread batter evenly into pan.
  6. Bake for 19-22 minutes.
  7. Remove brownies from oven and let set for 5-10 minutes before moving to a cooling rack.
  8. Let cool and cut into bars.
  9. Right before serving frost these brownies with the cookie dough icing found below.

Cookie Dough Frosting

Ingredients:

  • 1 1/2 Cups Chickpeas (Drained and Rinsed)
  • 1/4 Cup Cashew Butter
  • 1/4 Cup Unsweetened Almond Milk
  • 1/4 Cup Agave (Honey or Stevia)
  • 2 Packets of Truvia (or Stevia of choice)
  • 3 Tbsp Flax Meal (Ground Flax)
  • 1 Tbsp Vanilla Extract
  • Dash of Salt
  • 1/8 Tsp Baking Soda
  • 1/3 Cup Dark Chocolate Chips (or Carob)

Directions:

  1. Place all ingredients (excluding the chocolate chips) in your food processor and blend until perfectly smooth.
  2. Scoop into a bowl (or onto your brownies) and stir-in chocolate chips.
  3. Serve!
